1975 3.0 si restoration

I have a 1975 3.0si that was given to me by my dad. There is no engine in it and i've heard that there are many different options for engines that fit that model. Rhinewest in San Antonio said that i could use either the original 3.0, the 3.3, or the 3.5. Has anyone else heard about this or have any tips for the resto?
