is there any gain to be had from putting a 325i thottle body on to a 323i

You know what, it's possible, but you would be using a 328 throttle body, not 325. The 325 has the M50 engine which is OBD1 and your 323 has a variant of the M52 which is OBD2 and found in the 328. The traction control system in OBD2 cars (ASC) works with the throttle body and it is not present on OBD1 cars.
I do know for a fact that you can pick up a significant hp gain by switching to a 328i exhaust midpipe and an M3 rear section. I haven't seen dyno charts or anything but I have stories of people picking up ~30 wheel hp from exhaust mods on 323's.
