Pete, I feel the submerged in coolant sensor is better in accuracy and clean reliable method.
On the other hand the Rad-Fin probe appears flimsy, doesn't conduct as well, and will move over time.

No, I wouldn't remove the A/C aux fan. The aux fan is there to keep you cool on those hot days while stuck in traffic.
Yes, leave the A/C fan wire alone.
