Dealer is feeding you a bunch of BS. You should never get a low coolant light come on if there's nothing wrong.

It could be the sensor or a small leak when the car is on...

The dealer has the option to CPO a car they get back. If it had been in an accident i'm sure they would have let it go to auction.
