You do not, just because you are replacing the tires that is. If your old tires are show signs of odd wear or the wear is different between the two. Then, you would want to get an alignment done.

Textar rotors and pads are the best OEM you can buy, they don't rust either. They are also better than most after market kits in the same price range, and hold up well with use of other types of pads...

I would check the MAF sensor and or possibly a dirty throttle body. The fact that it is occurring when the air is more humid leads me to think it is air related in some way.

The biggest gain in performance in this edition is the M Performance 2-way adjustable coil-overs, which KW developed for BMW, to BMWs spec. They are getting great feedback.

I would suspect alignment is off, in the rear. I would have them check the alignment and show you before and after settings. Surprised the dealer did not check...
