If you are certain you are low two quarts and the light isn't on, then the sensor is malfunctioning. They go bad. Get a Hella and replace during next oil change.

Sure thing. I'm sure you'll get it resolved. Oh and taking the gas cap off while the engine is running may be the easiest and safest (for your car, not you) way to trigger the SES. I've never done it...
