Maintenance is more important than mileage. If you find something with 180K miles, timing chain guides, cooling system, suspension replaced, etc - much better than 80K miles and due for all of those...

Instead of boring out wheels, consider using E60 bearings/hubs. You can still use your E39 wheels with rings and will have a lot more wheel options.
