how do you format the date

I have tried to change the date format and cannot find the area to do so. It is mentioned in the manual by using the controls on the stalk. Only the actual date can be changed, not the sequence for month date , year. Yes it is currently dd/mm/yy which drives me nuts. Any ideas?
