There usually isn't a drain valve in the power steering resevoir, so you'll have to use a turkey baster or fluid extractor to suck the old stuff out and replace it with new fluid. Since that won't get any fluid already in the p/s lines, you'll probably have to repeat the process every few weeks or so to cycle as much of the old fluid out as possible.
Not sure which p/s fluid you can use, but I'd guess any Dexron III. But verify that from your owner's manual, the dealer, etc. before you actually use buy/use it.

"Every few weeks" sounds bit long to me.
More like, 3 seconds of the engine cranking. This will mix the new fluid from the reservoir and fill it back with the used one coming from P/S lines. Did that and it is actually quite simple method but the problem is that you waste much more fluid than is contained in the system. I was left with 4l (around 1gal) bottle of the ATF from my previous car and i've used it all to replace and flush the power steering.

to flush the system. The other method of getting the fluid out of the system is to disconnect RETURN hose from the expansion tank fasten it REAL WELL (high pressure!) to some kind of container and crank engine for second or two to pump oil out of the system. The fastening bit is really important, otherwise you will end up with oil everywhere, not only engine compartment.
