Well, the body shop you consulted with is basically right - you'll have to find used parts somehow, which isn't easy, since most used 2-door E36 door panels aren't in the best shape these days. I'd keep looking on Craigslist, eBay, forums, etc. Those top plastic railing is notoriously fragile, and to my knowledge, you can't buy that part individually anywhere. Are yours damaged beyond being able to glue them back together?

Allsher.com makes the upper connection piece for the coupe door panels in carbon fiber, but they don't sell it. They use it on their own interior repairs.

If you want the door panels better than new and guaranteed for life, contact these guys:

....but be prepared for sticker shock. You get what you pay for.

LOTS of upholstery shops can do the headliner if you don't want to tackle it yourself. The seat repair will depend on how bad they really are. They may be able to fix them, or they may need recovering.

if you have a rivet punch you can put bolts into the door to hold them on much better.

Here's the pictures of my door with the rivits, once you take the door off and look at my picture and where they are on the door you should know where to do it. however, on the bottom you'll still need the clips but they wont come out as easily. The job took about an hr for each door.
