If you drive on the A8 with export tags, you'll probably get pulled over. (E61 with "Bitte Folgen" paddle for tax evasion)

If you drive in urban Switzerland, you'll probably get pulled over. (Roadblock for tax evaders)

If you speed in Austria, you'll probably get pulled over. (European equivalent to VA with lots of new laser guns)

If you don't hit the brakes for the former east German speed trap where the Rasthof goes over the A9, and the limit goes from unl. to 120 km/h, you'll get a neat souvenir in the mail.

Was stopped today actually by a green Zoll (Customs) car just after crossing the border from Czech Republic back into Germany near Mittereich.

A serious officer asked for my passport, vehicle registration and insurance papers. No request for my license, but they saw that I had an IDP if they wanted to look. After verifying the details, he came back to confirm that I bought the car in Munich, how long I had been in CZ, and what I was bringing with me (specifically if I was trying to import tobacco or move more than 10,000 - haha I wish!). No concerns raised, and I was on my way in less than five minutes.
