09 528XI wanting to go with bigger rim without lowering

How big can I go without having to lower? And what tire size and offset?

Can't find any xdrive pics. With larger wheel.

I don't like linking away from this forum but this thread has a lot more information about x drive wheel fitment than here. X Drive aftermarket wheel and suspension.

So stock is 43, does that mean 30 will set them deeper in well or out further?

You will need to watch for + or -, Stock should be -43. So -30 would push them further out towards the fender lip.

We have used up to 19" wheels with 245/35R19 with no problem o this vehicle.

Fact offsets?
Look like a truck not being lowered or does the wheel well fill up nice?

We have fit a variety of non staggered setups on this car, but we have not tried any staggered setups.

Keep in mind that plus sizing will not "fill up the wheel well" as you will keep the same overall tire diameter.
