just recently my heat gauge started acting funny, it would gradually go up then fall back down to normal temp, but it would only do this once in awhile. Yesterday while at the gas station my car spit antifreeze out all over from the overflow tank. My gauge never went into the red zone though. Also just recently my heat seems to only work some of the time. Do you think this could be a thermostat, water pump, or head gasket and is there anyway i can check to see which one it is? thanks for any input

A little known fact is that the temp gauge is really more like an idot light, it only goes to the red area when it is overheating, and gives no real warning of increasing temps (goes full bore when too hot, then if it cools a little, goes back to normal).
We had a similar issue with a 528 a few years back, it was the thermostat (the gauge would fluctuate wildly just like yours).
Thermostat would be the first place to start IMO.
I guess the German engineers feel they are smarter than we are by making the gauge this way.
I had gas pillow in the cooling system and the temperature indicator played the same dance. Changed thermostat and coolant and no problems for now, almost 2 years It is good idea to check fan clutch also.
I'm almost sure it's the thermostat. I would get that fixed as soon as possible, you don't want to play games with that engine because they don't handle overheating very well.
