Bore of E60 wheels is too small for E39, but: http://www.bimmerfest.com/forums/sho...ight=e60+wheel

Perhaps this BMW wheel size comparison chart can be of some help. The e39 is the odd ball with its larger 74.1mm wheel hub. You can have the wheels professionally bored out...or some have mounted e60 wheel hubs to there e39 (which I hear isn't hard to do).

If you must have this style of wheel, I successfully put 2003 745 wheels on my 2001 530i.

You need E46 to E39 wheel hub adapters, check turner motorsports, I bought mine from turner, you also need longer wheel bolts with 15 mm spacers and 20mm spacers come with special bolts to attach the adaptor first then you use your old wheel bolts to bolt the wheel to the adaptor. I truly didn't like the idea but I had to have those particular wheels.

How did you ensure the bore stayed concentric and properly centered?

Those are pretty cool, and you automatically get a wider stance. (will likely require rolling the rear fenders)
