Hoping to make the drive back from PCD to South Texas in Feb, any idea of a decent route where the roads are not slated or sanded for the winter?

We generally take I-85S to Montgomery, then pick up I-65 to Mobile, then I-10 when going to Houston. Not sure where you are in S. Texas. None of these will be salt/sanded unless there's a winter storm. To lessen those chances, you could take I-26E to I-95S. Then pick up I-10 in Jacksonville.
