1, test the continuity of the coolant temp sensor harness.
2, test the resistance of the coolant temp sensor with regard to temperature. It sounds like the engine is over fueling.

it is the sub harness that supplies the injectors, the coolant temp sensor, etc....

Ripping out the M50 and switching in an S52us would be less faffing about and more torque.
It be cheaper as well, so there are some funds for slowing down.
