Does the white smoke smell sweet? If it does, it could mean that the head gasket is leaking coolant into the combustion chamber, which can be caused by a bad overheat.

If the coolant guage goes straight to the red zone when you start the car, either you have air in the system, or the coolant guage or coolant sensor are broken.

Did you replace the thermostat because of an overheat, or did the car start overheating after you changed the thermostat?

i replaced when i took it to the shop and had it on the diagnostic the area kept coming up saying it needed to be replaced, now i have gotten it started the heat temp gauge is now showing as it is cold and it has a really bad tapping sound but before the car setup i had an oil change completed as well. i'm really lost on what to do

After you are done with the bleeding as stated by Balance, and still have problems, check coolant for color (brownsih?), look for milky oil. A compression test would be the best thing that I would recommend in a overheating situation. This will tell for sure if the headgasket is blown or not.

When I had my E31, I had this issue. If the car was constantly moving it maintained its temperature but would overheat and boil over at stoplights. Turned out the fan clutch was past its' useful life. It felt fine when I spun it by hand but apparently the internals were not functioning properly. Changed it out and she was a different car.
Wouldn't ever recommend running with the rad cap unlocked. Without the right pressure in the system nothing will circulate properly. A BMW bud once told me when trying to bleed the air out it's best to try getting the front end of the car on a steep incline so the radiator overflow tank is clearly the highest point. Seemed to work for me, either way the air will work its way out, will be stubborn though.

I had exactly same problem, when i was driving my coolant temp when up, catch here is when u idle coolant goes up but when u drive it cools down, so anyways i ordered new thermostat and new radiator hose, once u change ur thermostat and hose u have to do one other thing, even after u change these stuff, radiator doesnt get antifreeze to thermostat from its hose so pull the radiator hose out that goes to thermostat and pour antifreeze in der till it tops off this way u putting the whole system back on track after that car will be fine again

I let the second grade sentence structure go ... giving you a break assuming you might not have even finished high school ... but ... you really need to learn the difference between a beamer and a bimmer if you're going to ask questions here and you want to be taken seriously.

- What is the difference between a bimmer and a beemer and, um, yeah, a beamer (1)
