When I start my car first thing in the morning I get a low coolant message. When I restart the car after a stop there is no message. This morning I got the message, turned the car off immediately and re-started- no message. Any ideas? No over- heating issues.

So, how about opening the hood and looking in the expansion tank?

I'll LOL and 2nd that recommendation.
OP, don't be afraid to lift the hood, read the owner's manual, or get your hands dirty.

There’s a sensor at the bottom of the expansion tank. It could be faulty. Pull the tank and install a new sensor.

No dah. I was born at night but not last night. Did that first thing and ok
It's spelled 'duh'. And if you did that why not include that in your details so nobody would waste time writing up the recommendation? Carry on though.
