You may have a leak. I had a leak coming from the expansion tank. They tend to break easily...

I'm guessing you never checked the coolant level before this? Losing a very small amount over that many miles wouldn't be surprising, but it shouldn't be enough to turn on the low coolant light unless you have a leak somewhere. Check for any discolored or sticky areas around the expansion tank. Have you ever seen any fluid on the ground you couldn't identify or simply didn't check?

Just top off and drive normally. And after about 40 min of driving or when it's warm, pop the hood and look at the expansion tank for some water leaking. Exact same thing happened to me and found out my expansion tank broke. If it did, quite an easy diy fix. Goodluck!
