I need to replace the thermostat in my 1989 E30 325i, that I will use as a daily driver and the occasional track day.

What version is good for street and track use (71C, 75C, 80C)?

The stock one (80°C). There is no advantage, and several disadvantages to using a lower-than-recommended temperature thermostat.
