I have been searching for different wheels but have run into a bit of difficulty along the way. The issue at hand here is that I thought I would maintain my stock wheel size (16") but there doesn't appear to be much of a choice out there in 16" Bimmer wheels. I know a bunch of you have gone to a larger than stock wheel size and my question is simply why? Can my local dealer "tweak" the computer to show the correct speedo reading if I were to go to a larger tire/wheel set up?

No tweaking is necessary, your stock 16" wheels probably have 205/55-16 tyres on them to give a nominal diameter of 632mm. An equivalent 17" diameter wheels and tyre combination is 225/45-17, having a nominal diameter of 634mm - less than 0.5% difference.

Just make sure that the wheels you choose have the right bolt pattern (5 x 120mm) and offset of 47mm or thereabouts.
